Are there times when you really crave for something sweet to your coffee or tea, but don't really feel like putting that extra effort into baking? Then I have got the solution for you. These oatmeal florentines are done in a total of 15 minutes from start to finish - and that includes doing the dishes!
These oatmeal florentine cookies have origin from Sweden and does not look anything like fancy. With their plain, thin and round shapes they tell a story about traditions and childhood memories and fill your kitchen with a wonderful fragrance. They are delicious, with their crunchiness and caramel-like taste.
An impressing treat with the afternoon tea in an impressive amount of time. All you need is a meduim-sized sauce pan and a wooden spoon, two minutes on the stove and five minutes in the oven. Voila, and there you have some wonderful cookies ready for serving or drizzle them with melted chocolate to give them a more "fancy" appearance.
These cookies makes great company to ice cream and can also be shaped as small baskets while they are still warm. Shape the cookies over the bottom of a glass and let them cool.
Oeatmeal Florentines
Makes about 30 cookies
Cookies
75 g butter or margarine
35 g oatmeal60 g allpurpose flour
90 g sugar
2 tbsp heavy cream or milk
2 tbsp golden syrup
1/4 tsp baking powder
Decoration
30 g chocolate
Prepare 2 baking sheets with parchment paper
1. Melt the butter in a medium sized sauce pan over medium heat
2. Add rest of the ingredients and stir until well blended and smooth
3. Add a small spoonful of the batter on the baking sheet with 7-10 cm distance between each cookie as they need space to expand
Bake in a pre-heated oven at 160 C / 320 F (fan) for about 5-7 minutes or until they are golden brown in color
Let cool on the baking sheet for a few minutes, until they harden, then remove from the tray and have them on prepared serving plate
Melt the chocolate and drizzle over the cookies
STORING: Up to 1 week in an air-tight container
