Blueberry Blondies

Berrylicious blondies with white chocolate chips. Have a taste of summer with these lovely blueberry blondies served with whipped cream!

Summer is in the air. Bright and long sunny days have really given a sweet taste of early summer this year. Fresh berries in bright lovely colors are a must in this season. The use of them is versatile, they are perfect just as they are, or you can jazz up your cake by adding taste and color. Berries are also delicious in desserts and with ice cream.


I love blueberries. I think they have to be my favorite ones of all the berries. Sweet, firm and slightly tart, the American ones are so good! And what would be better than using your favorite berries in a delicious bake?

These blondies packed full of bursting blueberries and white chocolate chips are scrumptious. A dot of freshly whipped cream on the top and served with some fresh blueberries just adds the icing on the cake. So easy to prepare a great treat for the late summer tea or just enjoy with a glass of chilled milk.


This recipe have used frozen blueberries of the European type, but you could use fresh blueberries if you like. The white chocoloate chips added is a winner combination with blueberries and gives a nice texture and depth to these.


TIPS: Frozen blueberries do transmit color. Hence, it is not recommended to mix them into the batter, but instead sprinkle them on the top when the batter is added to the tray. Take a knife and carefully run it through to mix the berries in. This will prevent any purple discoloration to the finished cake.



Blueberry Blondies

Makes about 20 blondies

150 g / 0.66 cup butter
3 eggs

315 g / 1 2/5 cup sugar
135 g / 1.1 cup plain flour
1,5 tsp vanilla sugar
100 g  blueberries, frozen or fresh
50 g white chocolate, chips or chopped roughly

1 Grease or line one deep baking tray about 28x16 cm / 11x6 inches with parchment paper
2 Melt the butter in a sauce pan or in the microwave and set aside to cool
3 In a large bowl, whisk together eggs and sugar until a gooey mass forms using a hand whisk, it should take a few seconds (be careful to not over-whisk or the blondies may have a cakey texture)
4 Add in the flour, vanilla sugar and the cooled melted butter
5 Using the hand whisk stir gently until combined and then whisk for about 30 seconds until you have a smooth batter
6 Pour the batter into the prepared baking tray evenly and sprinkle with blueberries and white chocolate chips, use a knife to swirl through the batter to incorporate the berries and chocolate

Bake at the lowest slot of the oven at 160 C / 320 F for about 20-25 minutes or until a pin inserted in the middle comes out sticky with a little firm batter on it

Let cool and then cut into nice and clean squares with a sharp knife
Serve semi hot with whipped cream and fresh blueberries!
